Education:
  • Bachelor’s degree in Food Technology, Meat Science, or a related field from a reputed institution.
  • Training in Food Safety, HACCP, GMP, or ISO Standards will be an added advantage.

Additional Requirements:

Responsibilities & Context:
  • Evaluate daily orders, stock status of different chicken product categories and prepare production plan
  • Evaluate advance orders, stock availability and submit orders for live bird purchase to procurement team
  • Ensure that a specific amount of “safety stock” is maintained for each product category
  • Ensure the availability of the right number of employees and brief them about the production plan at the beginning of the shift
  • Supervise, evaluate and direct the chicken further processing in the production floor employees for performing the operations according to specific SOPs with full attention to safety, quality and higher productivity
  • Monitor and track waste, rework and machine down time
  • Identify, through a proactive approach, potential cost-saving and efficiency gain opportunities to improve overall chicken processing operations
  • Complete and review all Hazard Analysis and Critical Control Points (HACCP) requirements and paperwork
  • Inspect and confirm that machineries, equipment and facilities are properly maintained and sanitized for ensuring efficiency and quality of production before the production commences
  • Ensuring all food safety and other regulatory requirements are fully complied with throughout the production process
  • For any type of quality related clarification, consult the QA Manager and/or Production Manager
  • Ensure the halal procedure has been complied with every step of the production
  • Ensure FIFO (First-In-First-Out) on perishable products and ensure successful implementation of FIFO throughout packaging operations of chicken
  • Assist the new product development (including packaging) team to develop recipe for new products with due consideration for taste, quality and capability of existing production machineries
