Responsibilities & Context:

Production Manager & Product R&D Specialist – Frozen Potato Snacks

Position Overview

The Production Manager & Product R&D Specialist will be responsible for end-to-end management of frozen potato snack production and product innovation. This role combines operational leadership of manufacturing processes with research and development of high-quality frozen potato products, including French fries, wedges, hashbrowns, and other value-added potato snacks.

The position requires strong technical expertise in food processing, production optimization, quality control, and new product development, with a focus on efficiency, consistency, and market-driven innovation.


Key Responsibilities

1) Production Management & Operations

  • Plan, manage, and supervise daily production of frozen potato snacks, ensuring output targets, quality standards, and cost efficiency.

  • Oversee the entire production process including raw material handling, peeling, cutting, blanching, frying, freezing (IQF), packaging, and storage.

  • Ensure optimal utilization of machinery, manpower, and raw materials.

  • Develop and implement production schedules aligned with demand forecasts and inventory planning.

  • Monitor production KPIs such as yield, wastage, downtime, productivity, and conversion rates.

  • Lead and manage production teams, including supervisors, operators, and technicians.

  • Ensure compliance with food safety, hygiene, and operational SOPs.


2) Product Research & Development (R&D)

  • Lead R&D initiatives for frozen potato products including French fries, wedges, hashbrowns, and new snack concepts.

  • Develop, test, and optimize product formulations, processing parameters, and sensory attributes (texture, taste, color, crispiness).

  • Adapt international product standards to local raw materials and consumer preferences.

  • Conduct pilot trials, shelf-life studies, and process validations.

  • Collaborate with procurement, marketing, and sales teams to develop market-oriented products.

  • Continuously improve existing products to enhance quality, yield, and cost competitiveness.


3) Quality Assurance & Food Safety

  • Ensure compliance with national and international food safety standards (HACCP, ISO 22000, FSSC, GMP).

  • Work closely with the QA/QC team to maintain product consistency and regulatory compliance.

  • Identify and resolve quality issues related to raw materials, processing, storage, and distribution.

  • Establish traceability and documentation systems for production and R&D activities.


4) Process Optimization & Cost Control

  • Optimize processing parameters to improve yield, reduce wastage, and lower production costs.

  • Identify opportunities for automation, process improvement, and efficiency enhancement.

  • Manage production budgets and control operational expenses.

  • Support scaling-up of production capacity and introduction of new technologies.


5) Supply Chain & Raw Material Management

  • Coordinate with procurement for sourcing suitable potato varieties for processing.

  • Define technical specifications for raw materials and inputs.

  • Support contract farming or supplier development initiatives for processing-grade potatoes.


6) Leadership & Cross-Functional Collaboration

  • Train and develop production and R&D teams.

  • Work closely with management, QA, procurement, marketing, and engineering teams.

  • Prepare technical reports, production performance analysis, and R&D documentation for management review.


Qualifications & Experience

Education:

  • Bachelor’s or Master’s degree in Food Technology, Food Engineering, Agricultural Engineering, Chemical Engineering, or related disciplines.

Experience:

  • Minimum 6–10 years of experience in food processing, preferably in frozen foods, snacks, or potato processing.

  • Proven experience in both production operations and product development.

  • Hands-on knowledge of frozen food processing technologies (blanching, frying, IQF freezing, packaging).


Technical Skills

  • Strong understanding of potato processing, product formulation, and process engineering.

  • Knowledge of food safety standards (HACCP, ISO, GMP).

  • Ability to design SOPs, process flows, and quality protocols.

  • Data-driven approach to production optimization and R&D.
