Experience Requirements:
∎ 5 to 7 year(s)
Job Responsibilities:
∎ Prepare weekly staffs schedule including kitchen
∎ Distribute a “side duties ”and check that everything is done before the end of their shift.
∎ During slow periods, keep your employees busy by cleaning and keeping the BOH well maintained.
∎ Make sure all equipment is in its proper area in both section. Officers kitchen and workers kitchen
∎ Assist in any BOH area when needed.
∎ Instruct employees on how to avoid accidents or dangerous actions.
∎ Monitor staffs arrival time, breaks and departure time of the staffs including supervisor and Chefs.
∎ Receive deliveries of equipment and store it in the right place.
∎ Teach staffs to work as a team.
∎ Do inventory counts whenever needed and maintain par level of stock.
∎ Write daily, store, food requisitions for next day
∎ Purchase right product with reasonable price
∎ Check the quality of the purchase Food & Beverage make sure longevity of expiration
∎ Over sea food preparation area ensure that food is ready On time
∎ Keep the kitchen area, floor, store clean at all time
∎ Keep the restaurant tables, floor and washing area clean at all time
∎ Ensure that restaurant area tables are clean, sanitize and tidy
∎ Maintain good colleagues relations and motivate colleagues
∎ Check on a daily basis food preparation regarding portion size, quantity and quality as laid down in the recipe index
∎ Responsible for completing the daily checklist regarding mise-en-place and food storage
∎ Check work area for proper equipment and sanitation.
∎ Wipe down all counters and surfaces (shelves, tops, bottoms, posts etc.).
∎ Keep storage area clean and organized.
∎ Keep work area clean (floors, walls, ceilings, shelves and equipment).
∎ Sweep, mop and clean garbage when needed. Use “wet floor” sign.
∎ Always leave a clean area for the next person.
∎ Wash all glassware, chinaware and hollowware and store it only in assigned racks.
∎ Before, between and after meal periods, make sure to keep a clean environment.
∎ Report unusual situations to your supervisor (leaks, broken items, etc.)
∎ All staffs are responsible for safe working conditions. Potentially unsafe situations or environments must be corrected or shown to the ACS manager immediately.
∎ All staffs must be properly dressed per guidelines before reporting to work.
∎ Create a good working atmosphere for employees through communication skills and reinforcement.
∎ Check the garbage area during and after garbage removal, and make sure area clean, mop and tidy
∎ Garbage room area will be sanitized, disinfected clean.
∎ Focus on workers and our officers, seek to understand the internal/external customer and meet the needs of both the customer and the company.
∎ Work well in a team environment and motivate teams to sustain exceptional levels of performance including front of house and back of the house.
