Job Responsibilities:
∎ Ensure that the Food and Beverage operation runs smoothly and effectively in compliance with resort operational standards.
∎ Ensure that the Food and Beverage operation is profitable in accordance with approved operational budgets.
∎ Ensure that guests receive the highest quality of food and service.
∎ Ensure that the resort's Food and Beverage outlets are maximized to accommodate the highest yields in revenue without sacrificing the integrity of the outlets or employees.
∎ Work closely with all department managers to ensure communication of Food and Beverage promotions and activities.
∎ Produce forecasts on covers and Food and Beverage revenue according to resort criteria.
∎ Establish departmental policies and procedures to achieve objectives, ensuring they are consistent with other hotel policies and procedures.
∎ Ensure costs and expenses are tightly controlled to achieve maximum profits.
∎ Analyse forecast versus budget to ensure that maximization of sales is achieved.
∎ Establish and strengthen teamwork within each area of Food and Beverage.
∎ Review all Food and Beverage employee's performance in accordance with resort policy.
∎ Train employees.
∎ Confront negativity and resolve it immediately.
∎ Monitor and ensure the cleanliness of the work areas.
∎ Successful completion of the training/certification process for all areas in F&B.
∎ Ensure problems encountered are recorded, addressed, and resolved.
∎ Identify situations, which compromise the department's standards and resolve.
∎ Complete knowledge of: All liquor brands, beers, and non-alcoholic beverages available in each outlet. Designated glassware and garnishes for drinks. All bar menu items, preparation method, time, ingredients, sauces, portion sizes, garnishes, presentation and prices.
∎ Bar outlet layouts, table/seat/station numbers, proper table set-ups, room capacity, hours of operation, price ranges and dress codes.
∎ Knowledgeable and strictly abide by state liquor regulations, particularly those prohibiting service to minors and intoxicated persons.
∎ Establish par levels for supplies, alcohol and equipment. Complete requisitions to replenish shortages.
∎ Ensure that specified number of menus and wine lists are available and in good condition for each meal period.
∎ Perform any other duties as instructed by the General Manager.
Additional Requirements:
∎ At least 5 years' experience in the hospitality industry as Manager/Asst Manager F&B with positive customer service and client service work history.
