Additional Requirements: Responsibilities & Context: Product Quality Control
- Ensure that all raw materials, ingredients, packaging materials, and finished products meet company quality standards and regulatory requirements.
- Supervise in-process quality control at all stages — mixing, pasteurization, homogenization, aging, freezing, filling, hardening, and storage.
- Conduct sensory evaluation of ice cream (taste, texture, flavor, color, and appearance) before release to market.
- Approve batches only after satisfactory quality test results.
Laboratory Management
- Oversee microbiological, chemical, and physical testing of raw materials, mix, and finished ice cream.
- Maintain calibration and validation of laboratory instruments (pH meter, refractometer, viscometer, etc.).
- Ensure standard test methods (e.g., FSSC 22000, ISO 22000, BSTI) are followed.
Process & Hygiene Control
- Monitor plant hygiene and sanitation, including equipment cleaning (CIP/SIP), personal hygiene, and environmental cleanliness.
- Verify that sanitation and pest control programs are properly executed and documented.
- Conduct GMP (Good Manufacturing Practice) and food safety inspections regularly.
Compliance & Documentation
- Maintain all QC and food safety documentation in compliance with BSTI, BFSA, and FSSC 22000 standards.
- Ensure traceability from raw material to finished goods.
- Prepare quality reports, deviation reports, and corrective action plans for non-conformities.
Training & Team Supervision
- Lead and train QC officers, lab analysts, and quality inspectors.
- Conduct regular training on hygiene, GMP, food safety, and allergen control for production staff.
- Evaluate team performance and promote a culture of continuous improvement.
Coordination & Communication
- Work closely with Production, R&D, Maintenance, and Supply Chain departments to resolve quality-related issues.
- Communicate product feedback and quality trends to management for decision-making.
- Collaborate with suppliers to ensure raw material compliance and continuous quality improvement.
Continuous Improvement
- Develop and implement quality improvement initiatives to enhance product consistency, shelf life, and customer satisfaction.
- Investigate consumer complaints, identify root causes, and implement preventive actions.
- Participate in internal and external audits.
Safety & Compliance
- Ensure compliance with HACCP, ISO 22000, BSTI, and Environmental Health & Safety (EHS) requirements.
- Promote a culture of food safety and ensure zero tolerance for contamination or deviation.
