Job Context

The role of an Assistant Manager / Deputy Manager – Production & QC is crucial in driving revenue and business growth within the dairy sector. They are responsible for building and maintaining Production in a continuous process with highly quality control and contributing to the overall success of the company.

Job Responsibilities

  1. Oversee end-to-end production operations of Cheddar Cheese, Butter, Ghee, and other dairy products to ensure efficiency, quality, and timely delivery.

  2. Monitor and optimize production parameters (temperature, pH, coagulation time, fat content, etc.) to maintain product consistency, yield, and food safety standards.

  3. Ensure quality control at all stages—from raw milk inspection to in-process testing and final product analysis—ensuring compliance with BSTI, ISO, and HACCP standards.

  4. Manage production shifts and manpower effectively, ensuring proper allocation of resources, adherence to schedules, and smooth floor operations.

  5. Coordinate with the maintenance team to ensure proper functioning of pasteurizers, separators, cheese vats, butter churners, and other dairy equipment through preventive maintenance.

  6. Implement waste reduction strategies and process improvements to enhance productivity, reduce downtime, and optimize overall operational efficiency.

  7. Maintain accurate production and QC documentation, including daily reports, yield analysis, test records, and non-conformance logs for audit and compliance purposes.

  8. Enforce Good Manufacturing Practices (GMP), hygiene, and sanitation protocols across the production floor to prevent contamination and ensure food safety.

  9. Assist in internal and external audits (BSTI, HALAL & third-party audits) and ensure compliance with food safety management systems like HACCP and ISO 22000.

  10. Train and guide production and QC staff on quality standards, safety procedures, and new processes, while supporting R&D during product trials and new recipe developments.
