∎ The ideal candidate will have a strong international hotel background and a deep understanding of diverse cuisines.
Responsibilities & Context:
∎ Menu Development: Creating innovative and seasonal menus that reflect the culinary vision of the establishment. This includes planning food presentations and ensuring consistency in taste and quality.
∎ Staff Management: Hiring, training, and supervising the kitchen staff, including sous chefs, line cooks, and other kitchen personnel. This includes fostering a positive working environment and ensuring teamwork.
∎ Budgeting and Cost Control: Developing and managing kitchen budgets. This involves tracking food costs, minimizing waste, and ensuring profitability while maintaining high quality.
∎ Quality Control: Ensuring that all food produced meets the standards for taste, quality, and presentation. This includes conducting regular inspections and tasting sessions.
∎ Inventory Management: Managing food and supply inventories, including ordering and purchasing of ingredients while controlling costs and ensuring freshness.
∎ Sanitation and Safety: Maintaining health and safety regulations in the kitchen, including food safety standards and proper sanitation practices.
∎ Collaboration: Working with other departments (e.g., front-of-house staff, events coordinators) to create a cohesive dining experience and participate in promotional activities.
∎ Creativity and Innovation: Keeping up with culinary trends and integrating new techniques or dishes into the menu to attract and retain customers.
