Job Responsibilities:
∎ Regular monitoring of all areas to ensure good environmental, food, and personal hygiene.
∎ Ensuring cleanliness in all areas of catering premises.
∎ Monitoring that all the staff maintain personal hygiene as per SOP and reporting about the deviation to the Line Manager.
∎ Make awareness among staff about personal and food hygiene and conduct floor-level spot training for staff.
∎ Checking of receiving goods at the receiving point.
∎ Checking the expiry date and stock rotation of all store items daily.
∎ Monitoring production, storage, and dispatch process as per Food Safety and Hygiene Guidelines.
∎ Monitoring and evaluating HACCP records daily and making reports accordingly.
∎ Ensuring that raw and cooked food are kept separately.
∎ Checking the date code system of the finished product as per SOP
∎ Ensuring that Optimal Temperature is maintained in every stage i.e. production floor, packaging room, freezer, chiller, delivery van, high-lifter, and aircraft.
∎ Collecting samples for lab tests, sensory evaluation, investigation, and record keeping.
∎ Conduct some laboratory analysis as per the guidelines of the lab in charge.
∎ Monitoring daily and periodical pest control service & keeping records.
∎ Perform any other duties & responsibilities assigned by the line Manager.
