Job Context:
∎ Report to: Financial Controller
∎ Position Summary: We are currently seeking an experienced, thorough, and insightful cost controller to oversee cost management for our Hotel. In this role, you will work collaboratively with various department managers to analyze costs, assess vendor relationships, and maximize profitability. To succeed in this position, you will demonstrate an aptitude for efficiency, problem-solving, and resourcefulness, with a deep commitment to the bottom line without compromising quality.

Job Responsibilities:
∎ Work in conjunction with all department heads to ensure maximum profitability.
∎ Commit to maximizing efficiency at all levels without compromising quality and Develop and implement proactive solutions and cost-cutting measures.
∎ Check the cost of sales in all F&B outlets and ensure that the costs are within budget.
∎ Check and ensure that no material is issued out from the store without requisition or approval from the respective department head.
∎ Check the menu pricing on the systems and ensure the correct prices are loaded.
∎ Check the daily Food & Beverage revenues report submitted by the income audit for the accuracy of covers and average check.
∎ Responsible for preparing daily & monthly Food and Beverage Report and distribute to management.
∎ Prepare the daily and monthly cost report department in relation to cost of sales.
∎ Spot check on the receiving department to ensure that the scales are correct and goods are checked for quality.
∎ Coordinate with restaurant management and finance to sort out issues pertaining to F&B.
∎ Responsible to maintain the Menu Pricing, Consumption and PMS systems.
∎ Check and verify voids, discounts, complimentary , staff meals and staff discounts, Package meals, lost postings and all settlements done on the system.
∎ Check and cross verify if all sales have been transferred correctly to the Property Management systems (PMS)
∎ Maintain vendor and service provider relationships and Keep up to date on new vendors and possible cost-cutting partnerships.
∎ Understand the entire arc of the business and how productivity impacts profitability
∎ Perform test checking on the receiving of goods at the hotel to ensure that the procedures are followed correctly
∎ Attend major banquet events with open bar, prepare P&L statement of major banqueting events and prepare banquet revenue breakdown summaries.
∎ Randomly test the inventory of outlets by reconciling the opening stock with the closing stock, taking account of store issues and sales
∎ All other duties as directed by the Higher Management.

Additional Requirements:
∎ Age at most 40 years
∎ Only males are allowed to apply
∎ Experience Requirements:
∎ At least 3 years experience at the same role with an up-scale (4/5 Star) hospitality environment.
∎ Skills:
∎ Excellent verbal and written English communication skills, a sound knowledge of F&B cost controlling and computer literacy is a must with knowledge of Hotel Management Software, specially IDS.
∎ Exceptional organizational skills
∎ Attention to detail
∎ Ability to work independently and under pressure whilst prioritizing tasks and meeting deadlines
∎ Knowledge and Understanding:
∎ Budget management
∎ Stock control
∎ Full knowledge and understanding of all department, purchasing, invoicing and HR policies and procedures.
∎ Other requirements :
∎ Flexibility to work shifts including evenings, weekends and public holidays subject to rota and a willingness to extend of change hours and days of work from time to time upon request and subject to operational requirements.
∎ Prerequisite :
∎ Positive attitude and good communication skills.
∎ Flexibility to respond to a range Of different work situations.
∎ Ability to work on your own or as part Of a team.
∎ Have a good eye for detail.
∎ Strong leadership abilities and organizational skills.
∎ Strong client-facing and teamwork skills.
∎ Good judgment and decision-making skills.
∎ Good knowledge in computer's day to day operation.

Salary: Negotiable
