Job Responsibilities:
∎ Monitor the ordering, purchasing, receiving, storing and issuing functions.
∎ Regular daily inspections of quality and state of items in food store rooms on a minimum of once per day.
∎ Cleaning inspections and checks of all storerooms.
∎ Regular inspections on the conditions of refrigerated store rooms must be carried out with regard to temperature control and a temperature log needs to be maintained and kept on or near each walk-in fridge door.
∎ Check food, beverage and general receiving reports, issues and transfer.
∎ All items are to be received and stored in their correct manner according to storing location, Packaging, temperature, light, humidity etc. on a first in first out basis to enable stock rotation.
∎ All storerooms to be cleaned and sanitized daily.
∎ All issues to be ready by requested time. Storerooms must always be kept locked when not working inside and a great emphasis to be placed on security of inventories.
∎ All food and beverage orders are to be placed according to company policy liaising with Executive Chef, Bar Manager and F&B Manager.
∎ Carry out inventories without fail as per instruction by CFO & CS.
∎ Prepare Daily Food and Beverage Flash Cost Reports.
∎ Evaluate maximum and minimum stocks and have effective stocks.
∎ Carry out spot checks and Coordinate the Micros programming with IDS system.
∎ •Assist with Recipe costing and updating for Food and Beverage.
∎ Costing of special events for banqueting i.e. Special Promotions, Corporate Functions, 31st night, Ramadan, Christmas, Valentine 's Day functions etc.
∎ Carry out regular audits of Hotel POS system to ensure correct pricing and to highlight areas of inconsistency.
∎ To take charge of the month end inventory counts and to produce the month end Food & Beverage control report.
∎ Assist Food & Beverage Department in menu planning by means of costing, portion sizes, recipes, standardized menu, item presentation to ensure food cost objectives are met.
∎ Conduct Market survey to compare Tender & Market price variance.
∎ Attend enlisted Supplier visit with management team to fulfill the compliance required.
Additional Requirements:
∎ Age 27 to 33 years
∎ Both males and females are allowed to apply
∎ Understanding overall responsibilities of Cost Control throughout Job knowledge, analysis, attitude
∎ Must be knowledgeable in checking quality of goods and in working with supply schedules
∎ Leadership and supervision skill to manage team under and within/over departments related to work. Must be able to lead a team with different nationalities.
∎ Must be good in English language in spoken and written form Must have Typing skills
∎ Must have good knowledge of food and beverage items, consumable items.
∎ Advanced knowledge on software (IDS and others)
∎ Must have Computer skills: Windows XP, Word, Excel, and MS Outlook.
