Educational Requirements:
∎ SSC, HSC
∎ Preferred Professional Certification: Food Beverage
∎ Skills Required: Indonesian Cooking, Japanese Cooking

Experience Requirements:
∎ At least 10 year(s)

Job Responsibilities:
∎ To supervise a team of site assistant chefs/kitchen helpers.
∎ To run Japanese culinary specific kitchen in Powerplant construction site
∎ and all lodging related eating establishment.
∎ Heading selection of ingredients and develop recipes for the specific
∎ Japanese menu as per request by site management.
∎ To order and design kitchen layout, kitchenware supplies and establishment
∎ of site and lodging kitchen establishment to ensure smooth delivery of daily
∎ meal preparation for full on-site and off-site working staff and management
∎ staff.
∎ Ensure strict sanitization protocol and develop related standard operation
∎ procedures to ensure full kitchen staff follows safety and sanitary procedures
∎ that are compliant with local, state and federal regulations established for
∎ food preparation and cleanliness in commercial kitchens.
∎ Establish and maintain inventory system and stock checking procedures for
∎ all ingredients to maintain freshness.
∎ Participate and lead in local chefs hiring, training and oversee the kitchen
∎ staff to ensure food is prepared properly.
∎ Preparing various types of sushi dishes according to established guidelines
∎ on quality, portion size, presentation, and food safety
∎ Sterilizing all utensils, instruments, and equipment used in sushi preparation
∎ before every use
∎ To manage operation of kitchen budget based on approved menus and
∎ recipes
∎ Plans menus with subject to site management approval and estimating food
∎ costs and profits, and adjusting menus accordingly.
∎ Sourcing unique ingredients for the menus, and keeping stock levels fully
∎ up-to-date
∎ To monitored cooking procedures, quality and inventory stocks
∎ Maintaining a clean work environment in order to prevent food
∎ contamination
∎ Comply with all health and safety regulations associated to plant specific
∎ ruling under power generation site construction context
