- Candidate should have sound knowledge of ISO 22000:2018/HACCP/GHP/GMP/GLP/BRCGS/HALAL
Responsibilities & Context: - Oversee daily operations of the bakery department to ensure smooth workflow.
- Maintain production schedules to meet customer demand.
- Plan, organize, and supervise daily food production operations to meet production targets and maintain quality standards.
- Ensure compliance with hygiene, safety, and food regulatory requirements (HACCP, GMP).
- Should have good knowledge of RM, PM, and be capable of managing the suppliers to ensure quality ingredients at competitive prices.
- Work closely with QA and supply chain teams to support product development, quality improvement, and timely production.
- Schedule shifts and manage staffing needs.
- Implement SOPs and drive process improvements to reduce waste and optimize costs.
- Strongly lead, train, and monitor staff to maintain safety and quality standards.
- Maintain accurate records of production output, downtime, and other relevant performance indicators.
- Ensure consistency and quality of all bakery and dry products.
- Should have good expertise in exporting the product regularly.
- Develop new recipes and an innovative product line to ensure customer satisfaction with product quality & variety.
- Monitor the customer preferences and market trends to update/alter the products.
- Monitor the sales, profit margins, and productivity.
- Should have sound knowledge of Six Sigma methods and Control costs by minimizing wastage, monitoring portion sizes.
- Ensure compliance with food safety, hygiene, and quality standards (HACCP, ISO 22000:2018, BRCGS, BSTI, HALAL, etc.)
- Prepare and manage departmental budget.
- Prepare operational reports for management. Contribute to strategic decisions for expanding or improving the equipment use and bakery business.
- Resolve operational issues, customer complaints, and responsible for taking corrective and preventive actions (CAPA)
