Responsibilities & Context:
∎ Oversee the daily operations of the bar section, maintaining a smooth and efficient workflow.
∎ Lead, train, and supervise the junior baristas; schedule shifts, manage performance, and foster a professional team culture.
∎ Ensure cleanliness, hygiene, and compliance with food safety and health regulations.
∎ Design and update a creative, balanced, and trend-aware beverage menu, including coffee, mocktails, iced drinks, and seasonal specials.
∎ Collaborate with the culinary and marketing teams for menu launches, photoshoots, and promotions.
∎ Conduct regular tastings, feedback sessions, and audits to ensure menu consistency.
∎ Take full ownership of the preparation, storage, and standardization of all in-house syrups, purées, bitters, and infusions.
∎ Maintain production logs, shelf life tracking, and quality testing.
∎ Innovate new recipes and preserve traditional methods with precision and consistency.
∎ Lead R&D initiatives for new beverage trends, flavor pairings, and presentation styles.
∎ Stay updated with international café and bar innovations and adapt them to suit Tudo’s brand.
∎ Host internal R&D sessions and workshops to involve and upskill the team.
∎ Manage inventory for bar supplies, ingredients, equipment, and tools.
∎ Coordinate with procurement for timely and cost-effective sourcing.
∎ Ensure proper stock rotation, reduce wastage, and maintain accurate usage records.
∎ Deliver engaging and warm guest interactions at the bar.
∎ Handle guest feedback regarding drinks and take proactive action to address concerns.
∎ Ensure all drinks are served at consistent standards of taste, temperature, and presentation.
∎ The Head Barista at Tudo Restaurant is a leadership role responsible for overseeing all aspects of beverage service and bar operations. This includes drink recipe development, quality control, staff supervision, and in-house production of signature syrups and infusions. The Head Barista is expected to lead by example, ensuring service excellence, innovation, and consistency in every guest experience.
