Responsibilities & Context:
· Prepare a wide variety of goods such as cakes, cookies, pies, bread, etc., following traditional and modern recipes
· Create new and exciting desserts to renew our menus and engage the interest of customers
· Decorate pastries using different icings, toppings, etc., to ensure the presentation will be beautiful and exciting
· Monitor stocks for baking ingredients such as flour, sugar, etc., and make appropriate orders within budget
· Check the quality of material and the condition of equipment and devices used for cooking
· Guide and motivate pastry assistants and bakers to work more efficiently
· Identify staffing needs and help recruit and train personnel
· Develop menu design and concept for all food and bar outlets and catering events.
· Supervises Assistant Executive Chef, Room Chefs, and Sous Chefs in daily operations.
· Represents the F&B department during monthly financial reviews.
· Ongoing management of the kitchen operation, including menu creation.
· Ensure the highest possible standard of hygiene is practiced and maintained
· to meet Health & Safety regulations and HACCP food preparation guidelines
· Recruit and develop chefs & stewards.
· Maintains food costs and labor percentiles.
· Maintains consistent food quality for all F&B outlets.
· Responsible for the development and implementation of menus for all outlets.
· Supervise and control factory officers, Karigors & workers. Assign and ensure accurate work with uninterrupted production.
· Maintain close liaison with the purchase team to prepare and receive the necessary raw materials on-time for efficient running of the factory.
· Analysis of the performance of factory Chefs and workers. Also, be active in the recruitment process of Karigor and the workers of the factory.
· Support the Sales and Marketing team to meet the sales target (daily, weekly, and monthly),
· Provide a professional, advisory, and executive support service to implement the strategic goals of the establishment.
· Keep the accounts of all factory expenses, including daily production costs.
· Engage in menu engineering and product control, ensuring the highest food standard is achieved whilst selling at the correct prices.
· Conduct development and performance reviews, identifying key personnel for further development and a structured career path for the Chefs of the factory
· Exploring possibilities for new products and new relevant business ideas
· Implement and maintain training systems to ensure that associates have the necessary framework and skills to perform their job efficiently and effectively.
· Prepare every product costing
· Ensure congenial working atmosphere for the departmental employees.
· Support the team to produce the reports: Performance (Monthly), Budget (Monthly & Yearly), - Expenditure (Monthly & Yearly), and Target vs Achievement (Monthly & Yearly) or any other essential reporting assigned by management.
· Support the Sales and Marketing team to develop and implement strategies and special events
· Quality inspection during production to ensure the best quality of product.
· Any other jobs assigned by the reporting authority from time to time.
