Responsibilities & Context:
∎ Design and update menus based on seasonal ingredients and customer preferences.
∎ Introduce innovative dishes while maintaining the authenticity of cuisines.
∎ Ensure cost-effectiveness without compromising quality.
∎ Oversee daily kitchen operations across all outlets (restaurant, room service, banquets, etc.).
∎ Supervise food preparation to ensure consistency and high standards.
∎ Monitor portion sizes, food presentation, and quality.
∎ Manage food cost and inventory to meet financial targets
∎ Work with the purchase team to source high-quality ingredients at the best prices.
∎ Track wastage and implement measures to reduce it.
∎ Recruit, train, and manage kitchen staff including sous chefs, line cooks, and stewards.
∎ Assign duties and create staff rosters
∎ Conduct regular training on hygiene, safety, and culinary skills.
∎ Ensure all food is prepared in compliance with hygiene and safety regulations (HACCP or local standards).
∎ Maintain cleanliness and sanitation in all kitchen areas
∎ Oversee pest control and proper storage of raw and cooked foods.
∎ Maintain par stock levels.
∎ Ensure proper storage, labeling, and rotation of food items.
∎ Conduct regular inventory checks
∎ Work with the banquet team to customize menus for conferences, weddings, and special events.
∎ Oversee food preparation and presentation for large-scale events
∎ Coordinate with F&B Manager, Purchasing, Housekeeping, and Front Office for smooth operations.
∎ Participate in management meetings and strategy planning.
∎ Interact with guests for feedback and special dietary needs.
∎ Resolve food-related complaints promptly and professionally.
∎ Prepare kitchen performance reports for management.
∎ Monitor KPIs like food cost %, kitchen productivity, and guest satisfaction scores.
