Deputy Manager/ Manager - Wafer Production

Strong communication and team management capabilities.

Computer literacy, particularly MS Excel and production reporting.

Ability to implement modern manufacturing practices such as Lean Manufacturing, 5S, and Kaizen.

Experience in a reputed FMCG or bakery manufacturing company will be highly preferred.

Lead and manage the overall wafer production operations to achieve daily, weekly, and monthly production targets.

Develop production plans, schedules, and resource allocation based on market demand and business requirements.

Have strong technical knowledge of the complete wafer manufacturing process, including raw material preparation, batter mixing, wafer sheet baking, cooling, cream preparation, cream spreading, wafer book assembly, cutting, and packaging.

4.      Ensure proper standardization and optimization of wafer batter formulations, cream recipes, and product specifications.

5.      Monitor and control critical production parameters, including batter viscosity, baking temperature, baking time, wafer sheet thickness, moisture content, cream consistency, and product weight.

6.      Ensure consistent wafer sheet quality, uniform color, crispiness, texture, cream distribution, and finished product appearance.

7.      Monitor wafer baking oven performance, baking plates, cooling conveyors, cream mixing systems, spreading machines, cutting equipment, and automatic packaging lines.

8.      Optimize production efficiency, machine utilization, manpower productivity, and overall equipment effectiveness (OEE).

9.      Minimize production losses, broken wafer sheets, rejected products, cream wastage, and packaging material wastage.

10.  Ensure compliance with food safety standards, GMP, GHP, HACCP, ISO 22000, and other applicable food manufacturing regulations.

11.  Work closely with QA, R&D, Engineering, Maintenance, Supply Chain, and Warehouse teams to ensure uninterrupted production operations.

12.  Lead, supervise, train, and develop production supervisors, operators, and other factory personnel.

13.  Ensure proper preventive maintenance of wafer baking ovens, batter mixing machines, cream preparation systems, spreading machines, cutting machines, and packaging equipment.

14.  Lead new product development, new flavor introduction, recipe improvement, product trials, and commercialization in coordination with R&D and QA teams.

15.  Monitor finished product quality, shelf life, crispiness, moisture migration, cream stability, packaging integrity, and sealing performance.

16.  Implement effective cost-control measures and ensure optimum utilization of raw materials, ingredients, utilities, and packaging materials.

17.  Prepare and analyze daily, weekly, and monthly production reports, material consumption reports, yield reports, and operational performance reports.

18.  Identify opportunities for continuous improvement, process optimization, productivity enhancement, and manufacturing cost reduction.

19.  Ensure proper housekeeping, personal hygiene, workplace safety, and discipline throughout the production area.
