Responsibilities & Context:
Monitor and control Food & Beverage costs and maintain targeted food cost percentages.
Conduct physical stock counts and reconcile inventory with book/system balances.
Monitor purchasing, receiving, issuing, consumption, wastage and spoilage.
Prepare daily, weekly and monthly Cost & Variance Reports.
Verify recipe costing, portion control and standard food yields.
Identify unusual consumption, wastage and inventory discrepancies.
Coordinate with Accounts, Purchase, Store, Kitchen and F&B departments.
Ensure proper implementation of inventory and cost-control procedures.
Provide cost analysis and recommendations to management for improving profitability.
Strong knowledge of Hotel/Restaurant F&B Cost Control and Inventory Management.
Practical knowledge of Food Cost, Beverage Cost, Menu Costing and Recipe Costing.
Good understanding of accounting principles, stock reconciliation and variance analysis.
Proficiency in MS Excel and accounting/POS/inventory software.
Strong analytical, numerical and reporting skills.
Good communication and coordination skills with Kitchen, Store, Purchase, F&B and Accounts Departments.
Ability to work under pressure and maintain accuracy in a fast-paced hotel environment.
Candidates with experience in 4/5-star hotels, reputed restaurants or large F&B operations will be given preference.
