Responsibilities & Context:
Team Management:
Supervise, train, and motivate the stewarding team.
Schedule staff and manage daily workloads.
Conduct performance evaluations and recommend promotions or disciplinary actions.
Hygiene and Sanitation:
Ensure that all kitchen, pantry, dishwashing, and service areas are clean, sanitized, and organized.
Monitor adherence to hygiene standards and local health regulations.
Implement and maintain Standard Operating Procedures (SOPs) for cleanliness.
Inventory and Equipment Management:
Monitor and maintain inventory of cleaning supplies, detergents, chemicals, and kitchen equipment.
Coordinate repairs and preventive maintenance of dishwashers, glass washers, and other stewarding equipment.
Control wastage and ensure cost-effective operations.
Operations Support:
Coordinate with the F&B, kitchen, and housekeeping departments for smooth service operations.
Assist in banquets, events, and daily restaurant operations as required.
Ensure compliance with safety procedures and minimize accidents.
Budgeting and Reporting:
Prepare stewarding department budget and monitor expenditures.
Maintain daily, weekly, and monthly reports on staff, equipment, and inventory.
