The Position:

The Senior Manager – Bakery Operations is responsible for planning, managing, and optimizing all bakery operations to ensure high-quality products, maximum efficiency, food safety compliance, and cost-effective manufacturing. The role oversees production teams, implements continuous improvement initiatives, and ensures production targets are achieved while maintaining the highest standards of quality, hygiene, and workplace safety. Reports to: Bakery Director.

• Lead and oversee daily bakery production operations to ensure production targets, quality standards, and delivery schedules are achieved.

• Maintain compliance with HACCP, GMP, ISO 22000, and all food safety and hygiene regulations.

• Monitor production efficiency, optimize labor utilization, minimize waste, and control manufacturing costs.

• Ensure consistent product quality by monitoring production processes and implementing corrective actions when required.

• Lead, coach, and develop production teams while promoting a culture of safety, accountability, and continuous improvement. Ensure international standards are maintained.

• Understand ingredients and raw materials to adjust recipes accordingly.

• Coordinate with Procurement, Warehouse, Quality Assurance, Maintenance, and Sales teams to ensure smooth production operations.

• Oversee equipment performance, preventive maintenance, and timely resolution of production issues.

• Prepare production reports, monitor key performance indicators (KPIs), and implement process improvements to enhance productivity and operational efficiency.
