Responsibilities & Context:
∎ Lead the kitchen brigade, fostering a culture of innovation, collaboration, and continuous improvement.
∎ Identify effective strategies for succession planning to ensure sustainable team growth.
∎ Recruit, manage, train, and develop kitchen team members to maintain high standards.
∎ Address staff performance issues in compliance with company policies.
∎ Menu Development & Culinary Excellence:
∎ Create and regularly review menus to meet and exceed customer expectations while adhering to brand standards.
∎ Ensure consistent production of high-quality food across all kitchen operations.
∎ Stay abreast of market trends and incorporate them into menu offerings.
∎ Operational Management:
∎ Oversee all aspects of kitchen operations, including quality control, budgeting, resource planning, and administrative functions.
∎ Ensure compliance with health, safety, and food safety regulations.
∎ Manage food control systems proactively to achieve target margins.
∎ Develop and maintain monthly working schedules in line with local legislation.
