Responsibilities & Context:

·Monitor and control Food & Beverage, Rooms, Spa, Banquet, and other departmental costs.

·Verify daily receiving reports, purchase orders, invoices, and goods received notes (GRN).

· Ensure all purchases comply with approved vendors, contracts, and company procurement policies.

·Conduct daily, weekly, and monthly inventory audits of stores, kitchens, bars, and operating departments.

·Perform surprise stock counts and investigate inventory variances.

·Prepare recipe costing, menu costing, and analyze food and beverage cost percentages.

·Monitor wastage, spoilage, pilferage, and recommend corrective actions.

·Prepare daily, weekly, and monthly cost control reports for management.

·Analyze price fluctuations and recommend cost-saving initiatives.

·Reconcile inventory movement with accounting records and ERP/POS systems.

·Coordinate with Purchasing, Stores, Kitchen, F&B, Accounts, and Internal Audit departments.

·Assist in budgeting, forecasting, and month-end closing activities.

·Ensure compliance with internal controls, SOPs, and external audit requirements.

·Support the Financial Controller in improving profitability through effective cost management.
