Educational Requirements:
∎ Bachelor/ Master's degree in Business Studies from a public university/ reputed private university with good academic results.
∎ CA Partly Qualified (Certificate level)/CMA-Level 2.
Experience Requirements:
∎ At least 5 year(s)
Job Responsibilities:
∎ Gather, process, analyze and present relevant data on the performance of the food and beverage department with appropriate comments to the management.
∎ Take corrective action whenever necessary and counsel the F & B manager and the executive chef accordingly.
∎ Prepare weekly/monthly profit and loss statement for each F & B outlet, especially for big banquet event.
∎ Initiate and introduce improvements in F & B controls, systems and procedures that are found necessary to ensure effective food and beverage control.
∎ Conduct spot checks in the receiving, stores, food production and all F & B service areas.
∎ Ensure proper compliance of receiving SOP and periodically review receiving procedures and routines.
∎ Keep strict control over liquor consumption, ordering, spoilage as well as breakage and adhere to strict grooming and hygiene standards.
∎ Co-ordinate with the F & B Managers to review reports on his department and recommend appropriate corrective action.
∎ Co-ordinate with the purchase manager for constant post audit of contract prices as per the bidding sheets.
∎ Communicate with the AFC/FC to review the food and beverage stores systems and procedures.
∎ To co-ordinate with the executive chef for the periodic F & B inventories.
∎ Obtain permission from Narcotics Control Department for various alcoholic beverage issues
∎ Open LC and complete related job for importing alcoholic beverage
∎ Renew all kinds of Bar and alcoholic licenses before expiry date
∎ Assess the popularity of each item on the menu of various outlets by means of menu engineering on a quarterly basis.
∎ Plan and conduct monthly stock count to all stock locations including outlets and investigate the variance against the system balance. Any unusual variances should be brought to the attention of Director of Finance.
∎ Prepare stock variance report supported with physical inventory count and system-generated report.
∎ Monitor and ensure that all slow moving and non-moving inventories are identified at all location and implement action plan.
∎ Conduct daily/weekly beverage spot check at all outlets and agree the count to the system balance.
∎ Trace the minibar consumption against sales and investigate the variances on a monthly basis.
∎ Monitor and check the menu pricing and cost on the POS systems agree with the cost in inventory system.
∎ A minimum of 20 key items should be checked weekly on alternating stock categories to ensure actual stock value agree to the supplier's current value. Any discrepancies should be investigated and update the system value with the approval of Financial Controller.
∎ Monitor the food & beverage inventory turnover and determine the par stock level.
Additional Requirements:
∎ Age 35 to 40 years
∎ Both males and females are allowed to apply
∎ 5 years' experience on related job will be preferable.
∎ Excellent in Microsoft Excel, Word and Power Point.
∎ Self-motivated, pro-active and guest focused team player.
∎ Pleasant personality with strong communication skills.
∎ Fluent in written and spoken English.
∎ Knowledge on accounting software (SUN system, MC, Opera) will be considered as extra advantage.
∎ Ability to adapt , grow and learn in a changing and progressive environment.
