Responsibilities & Context:

Key Responsibilities:

1. Cost Control & Analysis

• Monitor and analyze daily costs related to food, beverages, and operational expenses.

• Identify cost variances and recommend corrective actions.

• Ensure proper cost allocation and control mechanisms are in place.

2. Inventory Management

• Oversee inventory levels and ensure accurate stock records.

• Conduct regular physical stock counts and reconcile variances.

• Ensure proper stock rotation methods (FIFO/FEFO) are followed.

3. Purchasing & Receiving Control

• Verify purchase requests and ensure alignment with budget and operational needs.

• Monitor receiving procedures to ensure correct quantity and quality of goods.

• Ensure all goods received match purchase specifications and approved standards.

4. F&B Control

• Monitor recipe costing and pricing adjustments.

• Track complimentary items, discounts, and wastage, ensuring proper approvals are in place.

• Coordinate with kitchen and F&B teams to maintain portion control and minimize waste.

5. Financial Reporting

• Prepare daily, weekly, and monthly cost reports for management.

• Analyze trends and provide insights for cost optimization.

• Maintain accurate documentation for all cost-related activities.

6. Compliance & Process Improvement

• Ensure adherence to company policies, SOPs, and financial controls.

• Identify process gaps and recommend improvements for efficiency and cost savings.

7. Quality Assurance & Operational Compliance

• Ensure all materials and food items meet company quality standards.

• Conduct random quality checks on received goods.

• Coordinate with departments to ensure consistency in product quality.

8. Standardization & SOP Monitoring

• Monitor adherence to SOPs across purchasing, receiving, storage, and production.

• Recommend corrective actions where deviations are identified.

9. Vendor Quality Evaluation

• Evaluate supplier performance based on quality and consistency.

• Report quality issues and coordinate corrective actions with procurement.

10. Audit & Inspection Support

• Assist in internal and external audits.

• Maintain proper documentation for traceability and compliance.

11. Hygiene & Safety Compliance (F&B Focus)

• Ensure proper storage, handling, and hygiene practices are maintained.

• Support compliance with food safety standards and regulations (HACCP).

Knowledge of quality control standards and food safety practices (HACCP preferred).
