Job Context:
∎ Manages all functions of the Food Production and Stewarding operations to achieve the optimum departmental profit within their designated kitchen.

∎ Optimum quality level of Food Production and Sanitation within their designated Kitchen.
∎ Controls and analyzes on an ongoing basis , the level of the following within their designated kitchen :
∎ a) Sales
∎ b) Costs
∎ c) Issuing of food
∎ d) Quality of presentation of food products Condition and cleanliness of facilities and equipment
∎ e) Guest Satisfaction
∎ Conducts such functions as, performance evaluation, coaching, counseling and taking disciplinary actions to ensure the appropriate staff productivity and efficiency within their designated kitchen.
∎ Implements training plans for the Food Production employees and other Food & Beverage employees within their designated Kitchen.
∎ Attends and participates Briefings and other meetings as required by the Outlet Head.
∎ Participates in Food Production as necessary in accordance with the requirements and practices of their designated section / restaurant.
∎ Implement the Hotel Policies and Procedures.
∎ Assists the Outlet Chef in keeping updated files on all section / restaurant matters.
∎ Assist the Outlet Chef in monitoring the stocks of all Food, Beverage, Materials and Equipment and ensures service commitments are met.
∎ Performs related duties and special projects as assigned.

Job Responsibilities:
∎ Directly responsible for all kitchen Demi chef de parties and Commis Chef
∎ Under the direction of the Outlet Chef and within the limits of established Renaissance Hotels Policies & Procedures, supervises and directs all aspects of the Food Production within their designated Kitchen.

Additional Requirements:
∎ Both males and females are allowed to apply
∎ Minimum 3 years experience as Chef de Partie in a 4 or 5* Hotel
∎ Some administration skills with sound technical ability relevant to their respective kitchen and responsibility.

Salary: Negotiable
