Responsibilities & Context:
  • Work as a Senior line cook, responsible for managing a specific section of the kitchen—such as sauces, grill, or pastry—to ensure high-quality food preparation, plating consistency, and strict adherence to food safety standards. They supervise junior staff, manage station inventory, and report to the Sous Chef. 

  • Section Management: Running a specific station (e.g., saucier, larder, grill, pastry).

  • Food Preparation & Cooking: Preparing, cooking, and plating dishes to the required standard and recipe specification.

  • Quality Control: Ensuring consistency, portion control, and minimizing waste.

  • Supervision & Training: Mentoring and supervising Commis Chefs and Demi-Chef de Parties.

  • Hygiene & Safety: Maintaining strict health, safety, and sanitation standards, including temperature checks and clean-as-you-go practices.

  • Inventory Control: Monitoring stock levels and assisting with ordering for their station. 

  • Experience: Previous experience in a professional kitchen (often as a Commis Chef).

  • Culinary Knowledge: Strong understanding of cooking techniques, ingredients, and food safety.

  • Leadership: Ability to lead a team and work under pressure in a fast-paced environment.

  • Organization: Excellent time management and organizational skills.

  • Certification: Culinary arts degree or equivalent vocational training is often preferred.
