Responsibilities & Context:

Job Description:

The Executive Chef/ Sous Chef will lead kitchen operations at Halda Valley Tea Lounge and oversee the preparation of authentic Bangla cuisine with a modern fusion and container-based presentation style. The role requires strong leadership, advanced culinary expertise, cost control ability, and innovation in Bangla platter, combo, and café-style meals.

Key Responsibilities:

  • Lead and manage overall kitchen operations, ensuring smooth daily workflow.

  • Prepare and supervise the preparation of traditional Bangla dishes including Tehari, Biryani, Mezbani items, Nihari, Rezala, Bhuna, Khichuri, and Jhal Fry with modern presentation.

  • Develop and standardize Bangla desserts (e.g., Firni, Jorda, Shemai, traditional sweets) in café-style serving format.

  • Ensure standardized portion control and container/platter-based serving formats suitable for dine-in and takeaway.

  • Execute Breakfast & Brunch items efficiently (omelets, parathas, combo platters, burritos, etc.).

  • Develop tea-pairing snacks and light meals aligned with the Tea Lounge concept.

  • Maintain consistency in taste, food quality, and presentation standards.

  • Monitor food costing, control wastage, and manage kitchen inventory effectively.

  • Ensure strict compliance with food safety, hygiene, and sanitation standards.

  • Train, supervise, and evaluate kitchen staff performance.

  • Introduce new Bangla fusion menu items and seasonal specialties.

  • Ensure timely preparation and service during peak hours without compromising quality.
