Responsibilities & Context:
∎ Oversee all kitchen operations, including food preparation, cooking, and presentation.
∎ Supervise and guide assistant chefs and kitchen staff to ensure a smooth workflow.
∎ Develop and maintain high standards of food quality, hygiene, and presentation.
∎ Design and implement nutritious and diverse breakfast menus catering to various dietary preferences and requirements.
∎ Ensure the timely preparation of meals according to the approved menus, maintaining consistency in taste and quality.
∎ Incorporate seasonal and locally sourced ingredients where possible to enhance the meals.
∎ Enforce food safety and sanitation standards in line with international guidelines.
∎ Ensure proper food handling, storage, and labeling to prevent contamination.
∎ Conduct regular checks on kitchen equipment and facilities to ensure cleanliness and compliance with hygiene protocols.
∎ Monitor and manage kitchen inventory, ensuring adequate stock levels of ingredients and supplies.
∎ Reduce food wastage and ensure efficient and cost-effective kitchen operations.
∎ Provide training and mentorship to kitchen staff, ensuring continuous skill improvement and adherence to culinary best practices.
∎ Plan and prepare meals for special events, conferences, or other occasions as required.
∎ Ensure the timely delivery of catering services in line with organizational needs.
∎ Adapt to changing requirements, including modifying menus to meet the evolving needs of the staff.
∎ Maintain detailed records of kitchen operations, including menus, inventory, and financial expenses.
∎ Provide regular updates on kitchen activities to the Facilities Manager or designated WFP staff.
∎ Objective:
∎ The Local Chef/ Asst. Chief will be responsible for preparing and providing high-quality catering services, specifically breakfast, to the UN staff at the Bhashan Char New UN Building. The objective is to ensure the provision of nutritious and timely breakfast meals that contribute to the well-being and productivity of the staff, in line with the building’s facilities and infrastructure.
