Responsibilities & Context:
∎ Ensure the maximum return from turnover by controlling staffing and product costs and ensuring all financial targets are achieved.
∎ Spearhead the development and launch of new brands to expand the business portfolio, drive market growth, and cater to evolving customer needs.
∎ Identify ways to enhance profitability by growing income streams, boosting customer participation in the catering offer.
∎ Drive initiatives to achieve top line revenue growth and optimize bottom line profitability through strategic planning, operational efficiency, and cost management.
∎ Manage menu planning and development, ensuring accurate food costing and profitable pricing strategies.
∎ Address customer complaints swiftly, ensuring effective service recovery and continuous enhancement of customer satisfaction.
∎ Enforce strict adherence to safety protocols, sanitation standards, and legal compliance, fostering a safe and healthy working environment.
∎ Work within the expenditure budgets set for the operation and to strive to meet and exceed income targets.
∎ Work collaboratively and creatively with other departments to assist in the development of new activities both in and out of season and maximize income from events and hires.
∎ Recruit, manage, train and develop the seasonal team to include duty managers, supervisors, chefs and catering staff.
∎ Oversee the completion of staff rotates, ensuring all areas are sufficiently staffed, and distributing in a timely manner.
∎ Supervise and evaluate the performance of catering staff, promoting accountability and excellence.
∎ Lead, motivate & develop capacity of team members to achieve business objectives.
