Requirements:

Responsibilities & Context:
∎ Establish and maintain quality standards of international standards and JCI standards.
∎ Monitoring and educating the kitchen staff in maintaining quality food products to patients, patients’ attendants, visitors and VIP’s.
∎ Taking feedback from the Service Manager, Dieticians on Patient/Patients’ attendants on the quality of food.
∎ Helping the Service Manager in marinating daily check.
∎ Documentation of all incidents, compliments and complaints related to food production.
∎ Need to liaise with the Manager, Engineering regarding any maintenance and requirements.
∎ To ensure shift staff are available in each shift.
∎ To ensure that quality of food preparation standards is in place according to international and national laws and regulations.
∎ To ensure that all kitchen staff must maintain personal hygiene and grooming, area cleanliness, food safety and infection control guidelines.
∎ To ensure that set up of all diet and food preparation areas is in order and all ingredients are available.
∎ To ensure that the diet items are prepared according to the dietitians and hospitals guidelines and on time.
∎ To ensure that all food items are prepared as per the given schedule and quantity.
∎ To ensure that the KOT protocols are maintained.
∎ To ensure that the correct inventory system is in place and followed.
∎ To ensure the Hand washing protocols and staff washes their hands before and after any cooking and after toilet use.
∎ To ensure the entire kitchen staff use personal protective equipment i.e; hand gloves, caps apron etc.
∎ Follows recipes, portion controls, and presentation specifications as set by the chef and dietitian.
∎ To ensure the highest standard of the Cleanliness and hygiene of Kitchen area.
∎ To make sure that the entire kitchen staff practicing good safety, sanitation, organizational skills.
∎ Has understanding and knowledge to properly use and maintain all equipment in station.
∎ Monitor the cleaning, sanitation, and organization of kitchen, walk-in coolers, and all storage areas.
∎ To ensure the minimum waste and maximum use of food ingredients and items.
∎ To make that all Refrigerators and freezer are cleaned and have correct temperature condition.
∎ Performs additional responsibilities, although not detailed, as requested by the Service Manager or GM – Hospitality.
∎ Must attend and ensure that the entire kitchen all safety training twice in a year such as Fire Safety, HAZMAT, Personal Hygiene and Grooming and Emergency Codes etc.
∎ Must attend all kinds of job skill training such as diet preparation, liquid diet preparation and any other food preparation conduct by Head Cook or Chef.
∎ Make duty roster for entire Kitchen staff.
∎ Assist the GM – Hospitality for administrative matters or any assignment given.
∎ General Job Description

∎ To oversee the entire food production of EHC in a manner that ensures compliance with international and national standard and laws with highest satisfaction of all Inpatients, Guests and Employees. The role is responsible to ensure the right diet for the right patient in right time. Also must ensure that the entire kitchen staff maintains the personal hygiene and grooming, area cleanliness, food safety and infection control as per given guidelines.
∎ He/She should be part of the quality improvement of JCI documentation process of the hospital.
