Job Responsibilities:
∎ P R I M A R Y R E S P O N S I B I L I T I E S
∎ OPERATIONAL:
∎ • To manage and ensure smooth and efficient operation of all kitchen sections
∎ • To define the tasks of each kitchen and their goals
∎ • To define procedures how to control the food cost
∎ • To define procedures how to guarantee the consistency of quality and presentation of the food
∎ • To ensure that a quality check is performed on every dish before it reaches the guest
∎ • To check work performance of direct subordinates and ensure that all equipment are cleaned, sanitized, and in working order
∎ • To check all kitchen freezers, fridges, storerooms for cleanliness and sanitation
∎ • To liaise with the F&B service and keep them informed on daily activities
∎ • To assist in the operations during busy periods
∎ • To study, evaluate and suggest improvements for operations procedures
∎ • To implement procedures in achieving forecasted food cost
∎ • To ensure that the Section’s Operational Budget is strictly adhered to and that all costs are strictly controlled
∎ • To monitor dry/cold store area: Force issue items, Par levels, FIFO policy and Cleanliness
∎ • To coordinate with Stewarding al necessary equipment and cleaning requirements
∎ ADMINISTRATION:
∎ • To maintain appropriate product stocks in the different kitchens
∎ • To label all open bags and containers with opening date and expiration date
∎ • To maintain all refrigerators and freezers clean and organized according to HACCP
∎ • To receive the products and ensure their appropriate quality
∎ • To ensure the proper storage of all products
∎ • To declare spoilage making a spoilage report
∎ • To maintain recipes of all kitchens up to date and ensure that the kitchen brigade cooks according to the recipes
∎ • To calculate the food cost to 33% when making new recipes
∎ • To establish the selling prices according to the prescribed food cost
∎ • To make sure that the portioning and food presentation is according to company policy
∎ • To be present during kitchen inventories and ensure that they are correct
∎ • To check all requisitions and inter-kitchen transfers, to monitor and to reduce food requisitions when necessary
∎ • To follow up that all standard photos are being followed as basis on their food presentation and set up in their respective sections
∎ • To update operations manual
∎ • To participate in employees performance evaluations and to counsel them when necessary
∎ • To attend the Food Production Departmental Meeting, F&B Briefing and other meetings, and conduct daily briefing to staff
∎ • To manage the manning level for all kitchens according to operational needs
∎ • To ensure that the daily mis en place is done correctly
