Experience:
To perform the de boning of beef quarters, trimming of beef primals into small portions and custom cuts within the processing facility by demonstrating the necessary knife skills and control to actively achieve the departments objectives for throughput yield and quality as per the specific product guidelines by complying with QSHE Policy and Standard Operating Procedures.
Responsible to handle and perform the process of deboning to meet daily production volumes vs targets as per the required as per products guidelines, specification and standard operating procedures.
Performing the trimming of beef primal & ensure to maintain the products quality standards and specifications.
Where necessary, set up and operate the tools associated with butchery tasks including but not limited to saws, membrane skinners and whizzer trimmers.
Ensure to minimize products waste by trimming excess fat as per standard meat handling techniques, products specifications, and standard operating procedures.
Actively maintain the flow of product through the process.
To ensure safe working environment and adhere compliance to all Almarai QSHE policies and GHP standards.
To maintain all cutting and operational tolls & equipment’s in serviceable condition as per Safety and hygiene standards.
Support in assigned responsibilities at slaughter lines for distribution operation of the carcasses as per the Almarai technical guidelines by complying with Almarai Company H&S and Environmental Policy.
Ensure to perform the post slaughtering processing operation of the carcasses in accordance with quality standards.
Ensure to perform the defined QC checks at slaughter lines and handle carcasses for further processing.
Perform steam vacuum cleaning of defeather carcasses and wash them in preparation for further processing or packaging.
Responsible to implement and maintain the hygiene and food safety standards at slaughter lines.
Manage the movement of trimmed and split carcass into chilling sections.
Ensure QA & QC standards implementation in chilling sections.
Know- understand- and comply with company Environmental Policy.
Responsible to maintain the good GHP in the processing areas.
