Job Responsibilities:
∎ Controlling and directing the food preparation process and any other related activities at a reputable fine dining restaurant in Dhaka.
∎ Developing menu items with new or existing culinary creations ensuring the variety and quality of the servings.
∎ Contribute to the design of pricing and costing structures of menu items to ensure profitability.
∎ Conduct seasonal recipe testing sessions to develop seasonally rotational menus.
∎ Curating, maintaining and archiving clear and detailed recipes for all menu items.
∎ Monitoring and tracking kitchen materials and supplies inventory list daily.
∎ Making note of necessary materials and/or supplies as per the kitchen inventory list and ordering/reporting as necessary.
∎ Responsible for the recruitment/hiring, training and review of kitchen staff.
∎ Maintaining cooperation, respect and positive morale amongst kitchen staff.
∎ Contribute to the sourcing of the required ingredients as per the menu.
∎ Creating and maintaining positive and effective business relationships with ingredient suppliers.
∎ Meeting budget requirements.
∎ In charge of allocating/scheduling weekly kitchen staff roster and ensuring that the staff roster is followed efficiently.
∎ Overseeing food and beverage quality and enforcing food handling regulations and other safety guidelines.
∎ Reporting all kitchen maintenance requirements daily.
∎ Making note of and ordering required ingredients for the kitchen daily.
∎ Ensuring prompt and timely preparation of kitchen materials, supplies and ingredients daily.
∎ Tracking, surveying and meeting restaurant demand and customer preferences.
∎ Monitoring, evaluating, and auditing food and beverage service offerings.
∎ Ensuring the overall smooth daily operation of the kitchen.
∎ Ensuring the highest standards of hygiene and safety in the kitchen.
∎ Ensuring the highest standards of dish quality and consistency.
∎ Identifying accurate staffing and kitchen equipment requirements regularly and reporting to the head office.
∎ Ensuring the effective and efficient operation of the kitchen.
∎ Ensure that the head office is promptly and fully informed of all issues and take prompt corrective action where necessary.
Additional Requirements:
∎ Age at least 28 years
∎ Minimum 8 years' experience in total.
∎ Must possess minimum 5 years' experience in a head/executive chef role at a reputable restaurant/hotel and/or minimum 7 years' experience in an assistant/apprentice/sous chef role at a reputable restaurant/hotel.
∎ Must be fluent in both English and Bangla.
∎ Must be aware of local and international culinary/restaurant trends, innovations and optimized kitchen processes.
∎ Must be creative and aware of food ingredient seasonality, freshness standards and pricing.
∎ Must be well-mannered and polite.
∎ Must have a keen eye for detail.
∎ Must be capable of efficient time management.
∎ Must be responsible and prompt under pressure.
∎ Must possess a strong knowledge of front and back of house operations including food, beverages, staff supervision, inventory, and food safety.
∎ Must maintain good hygiene.
∎ Must possess strong communication and leadership skills.
∎ Must be experienced working with budgets, payroll, revenue, and forecasting.
∎ Must be able to maintain positive morale among kitchen staff.
