Bring to a boil, then reduce heat and simmer until the vegetables are tender (about 15-20 minutes).<br>Puree the soup with an immersion blender until it&#8217;s smooth.<br>Stir in almond milk, salt, and pepper. Simmer for an additional 5 minutes.<br>Serve hot.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"Vegan_Chickpea_Stir-Fry\"><\/span>Vegan Chickpea Stir-Fry<span class=\"ez-toc-section-end\"><\/span><\/h2>\n\n\n\n<h3 class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"Ingredients-2\"><\/span><br>Ingredients:<span class=\"ez-toc-section-end\"><\/span><\/h3>\n\n\n\n<p><br>1 can washed and drained chickpeas<br>2 cups of a variety of veggies, such as bell peppers, broccoli, carrots, and snap peas<br>1\/4 cup soy sauce or tamari<br>oil 1 tbsp <br>1 tbsp maple syrup<br>1 tsp ginger, minced<br>2 cloves garlic, minced<br>Cooked brown rice or quinoa for serving<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"Instructions-3\"><\/span><br>Instructions:<span class=\"ez-toc-section-end\"><\/span><\/h2>\n\n\n\n<p>Add ginger and garlic, saut\u00e9 for a minute until fragrant.<br>Add the mixed vegetables and chickpeas, stir-fry for 5-7 minutes until tender-crisp.<br>In a small bowl, whisk together soy sauce and maple syrup.
